I rolled into town ready for lunch. Post Office Pies is in the trendy eastern side of Birmingham. It also includes a brewry.
Here are the woodfired ovens. Quite a setup.
They offer a variety of homemade lemonades. This is the classic and it was great. I could tell it was freshly made with the brightness of the lemon. It had the perfect amount of sugar to balance the acid. Wonderfully refreshing.
Unfortunately, something happened to my pizza photo. I ordered a red pizza with red peppers and mushrooms. Unfortunately, it wasn't ideal for my New Jersey-trained sensibilities. The crust was just a little too thick and didn't have the balance of crispness and chewiness that one looks for in the Tri-State Area. It also had almost no char despite having been cooked in a wood-fired oven. Not only is char fun, the lack of black spots suggest that the oven wasn't running very hot. The cheese laid out in squares by the piazzola and didn't have the richness I expected. The sauce simply disappeared.
