I just noticed Lion Tamer Bread, even though it has been at the corner of Clairmont and North Decatur Road since the beginning of the year. This is a hard-core bread shop, open in the afternoon and evenings.
I picked up a blonde loaf, which is white with vital wheat gluten (or was it bran?) and rye mixed in. It was still warm from the oven. As you can see, it was a beautiful loaf, the embodiment of artisan baking.
And wow, was it good! As you can see, it was full of air holes, a sign of a good yeast. The crumb itself was tender and relatively soft, as you would expect from an airy loaf. The crust was very crusty, a great texture contrast that is pretty hard to pull off. And the flavor was a superb combination of the white wheat, rye, and enhancements.
