Lunch at Red's 615 Chicken in Nashville

Red's is on the edge of Centennial Park near Vanderbilt University. Its location is unassuming which only enhances the experience. I asked for hot. The results got my attention but were quite tolerable. The sauce had a rich flavor that would have been lost in blistering heat. The meat was tender, the crust still firm. The staff was very welcoming and the day inviting. Thanks, folks!

Reuben Sandwich at the Cornhusker Hotel

This is my second trip to the Cornhusker for a Reuben. I ate at the counter and enjoyed the busy scene; the staff juggled everything masterfully. My sandwich well made and very enjoyable. The Reuben has become a classic because it balances so many elements of the sandwich: meat, bread, cheese, dressing. The Cornhusker has been identified as a possible birthplace for the Reuben. I've also been to its other homes in Omaha and New York, although a long time apart. Perhaps some day I can put together a tour to eat at all of them close together.

p p Taqueria Limon on Cornhusker Highway is my favorite food truck. I visited on a great day to sit in my car and enjoy my lunch: two tacos, corn cup with cheese. Everything was wonderful as always. Thanks, folks!

Beef Stock

I find homemade beef stock to be hugely better than the store-bought stuff, much more so than is the case for chicken stock. But making a batch is an all-day affair. Luckily, I had a day at home that I could use to cook the stock for eight hours. In addition to some meaty bones, I also found beef hooves. Just as I hoped, they made a very rich, gelatinous stock. This should be great for sauces and stews. I am grateful for both the enjoyment of the process and the nutritious result.

A Pork Shoulder Feast
