I have always enjoyed sweet potato biscuits. Seet potato not only gives a nice taste but helps to keep the biscuits moist. I decided to make use of some extra sweet potato using this recipe from Serious Eats.
Here is the sweet potato mixed with cream and buttermilk.
Butter is cut into the flour.
The flour mixture and the sweet potato mixture are lightly combined to make the final biscuit batter.
Here are the biscuits ready to go into the oven.
And here are the biscuits fresh out of the oven. They taste great and freeze very well.
