I was happy with the results of my peanut and sweet potato soup. I was inspired by this recipe from Serious Eats but I ended up doing something a little simpler based on what I had around the house.
I first roasted some peanuts and microwaved a sweet potato. I put them in the blender along with my leftover coconut milk and some sesame oil. The result was a little thick so I added some water to get the right consistency.
I then put the mixture on the stove for a few minutes along with a little hot sauce. The result was hearty, satisfying, and very peanutty. I could imagine adding chicken stock but this quick dish made for a satisfying meal.
