Eggplant Parmesan for Dinner

I haven't made eggplant parm in awhile and it was a treat. I like to keep the sauce separate until the last to preserve the eggplant's crispiness. Delicious! I am grateful for the chance to make and eat such a satisfying meal.

Happy Fifteenth Anniversary, Frosty Caboose!

The Frosty Caboose is a Chamblee classic that I have visited for many years, including yesterday. I asked the proprietor how long the Caboose had been in operation and she told me that today would be its fifteenth anniversary. Congratulations and thank you for years of memories!

At The Airport: Dinner at One Flew South at ATL

One Flew South is one of the best restaurants in Atlanta. It just happens to be in Terminal E at ATL. When I arrived, there was a bit of a line but I was taken to my table after only a short wait. The staff was superbly welcoming and efficient. My soup was deliciously spiced and creamy. My sushi was delightful. A perfect dinner on a hectic trip. Thanks, folks!

My breakfast at Beau's Cafe was truly outstanding. My chicken biscuit combined honey and pepper in a perfect balance. The chicken was perfectly fried, crispy on the outside and tender on the inside. Boise's Tupelo Honey is an outpost of the Southern restaurant I've visited in North Carolina. The food and service were both great. My fried chicken with hot honey gave me a kiss of heat, crunch, and moistness all together. Thanks, folks!

Breakfast and Semiconductor History at Elmer's Kitchen in Boise

Elmer's is near the river in central Boise. The building is a traditional 1960s coffee shop that has been lovingly maintained. The staff was superbly welcoming. My Dutch pancake was delicious and huge. Later in the day, I was told that Elmer's was also the spot where J. R. Simplot negotiated an investment in Micron Technology, now one of the world's largest memory producers. Thanks, folks!

Banana Chocolate Multigrain Pancakes for Breakfast

These pancakes are from the Kodiak mix, which I've found to be a great fast option. I used my sourdough starter, milk, and eggs. The bananas and chocolate add flair. I am grateful for such bounty.
