A Black Forest cake made a nice change of pace in my baking. I used a recipe from Food Network. The cake is of the old fashioned kind, lifted by whipped eggs rather than gaseous methods like baking powder or soda. (This technique predates both baking powder and electric mixers. Imagine whipping all of those eggs by hand.) The cherry filling calls for a small amount of kirchwasser, for which I substituted maraschino. The icing combines straight whipped cream with some whipped cream that has been stiffened with corn starch. The result was both beautiful and tasty. Little things like this cake help to lift my day and the days of those around me with whom I share.
