I made a pot roast using meat from Loeffel Meat Shoppe, a red wine marinade, some homemade beef stock, and the usual vegetables. THe result was hearty and comforting. I am grateful.

Banana-Strawberry Fussy French Toast

I saw fresh strawberries at the store and decided to make an old favorite. The banana/strawberry combination is always great and particularly for breakfast. I enjoyed both fruits on my fussy French toast. I am grateful.

The Take-Out Lifesty le: Lunch from Meatballerz

I haven't been to Meatballerz in quite some time and I was glad to see that they are doing well. My take-out lunch was just as delicious and enjoyable as I remembered it. I started with some salad. My main course was the spicy meatball-in-a-hole. This continues to be a wonderful innovation---a meatball you can eat like a sandwich without fear of it squeezingt it out of the end of your Italian roll. Thanks, folks, for the great meal!

A Curious Combination

I made fried rice for lunch. I had a homemade tostado left over from breakfast so I broke it up and sprinkled the pieces on top. Success!

Chicken Stock

Chicken is my most frequently used stock---rich but not overpowering. This batch came out thick and rich. I also recovered a thick layer of fat to flavor my cooking. I am grateful for this delicious and healthy food.

Leek Squash Soup

Soup is a winter treat. I made a pot of squash soup with leeks that I enjoyed over several days. I am grateful.

Peach Pancakes for Breakfast

My peaches have been in the freezer for quite some time. I pulled a bag to enjoy peach pancakes with whipped cream. Delicious! I am grateful.

Chicken and Shrimp Etouffee

An etouffe is a great treat. I started with the roux, cooked to medium brown. I cooked the trinity. I added the chicken and stock to cook. I made a stock out of the shrimp shells to add to the pan. The shredded chicken and shrimp went into the pan for a final round of cookilng. The result was full of flavor and wonderfully comforting. I am grateful.

Dairy Store Ice Cream

I used a trip to Loeffel Meat Shoppe to also visit the Dairy Store. This was my first visit there in awhile. I really enjoyed my ice cream in the evening. Thanks, folks!

Huevos Rancheros Done Right

In the past, I've topped my huevos rancheros with whatever white substance I had on hand: sour cream, ricotta, etc. This time I bought a pack of queso fresco and it was great. Its saltiness played perfectly with the rest of the dish. I will make this my standard practice.

Fried Chicken for Dinner

I haven't made fried chicken in quite some time. I bought a whole fryer and cut it up myself. I probably should have been more careful to trim the breast for even cooking. I served with green beans and mashed potatoes. Delicious and tender, I am grateful for this wonderful meal.
