A Pretty Good Reuben

I've been using the pastrami I made earlier to practice my Reuben sandwich technique. This one was pretty darn good. I put the Gruyere cheese on the toasted bread and melted it just enough. I put the Russian dressing on each layer of meat. Not too much dressing or kraut, just enough to smooth things out. I am grateful for simple pleasures.

Lunch from Yes Chef

Limited time to find a restaurant, limited time to eat. Yes Chef at the College of Business came to the rescue with a smile. Thanks, folks!

Dinner at the Iron Skillet in York NE

The Iron Skillet is a chain of restaurants in truck stops. I've eaten at various locations and always enjoyed their meals, which make a great break on a long trip. This was a short trip just to see what they served. I ended up with this tasty piece of salmon, just right. My server was very friendly and helpful. On the way out, I picked up some chocolates. A few of them managed to make it all the way home.

Very Active Yeast

My sourdough starter was extremely active for this loaf. The loaf at least doubled at each rise. The final loaf spilled over the pan. The crumb was very airy. I'm not sure what I did with my starter to make it so active.

Lunch at Pupusa Chacon Gonzales

This food truck is a regular on 27th Street. I visit occasionally and am always satisfied. The food is great and the proprietors friendly. I am a newcomer to pupusas and I find them very satisfying, particularly on a cold day. My cheese and bean pupusas had a perfectly blended filling that was delicious. Thanks, folks!

Black Forest Cake

A Black Forest cake made a nice change of pace in my baking. I used a recipe from Food Network . The cake is of the old fashioned kind, lifted by whipped eggs rather than gaseous methods like baking powder or soda. (This technique predates both baking powder and electric mixers. Imagine whipping all of those eggs by hand.) The cherry filling calls for a small amount of kirchwasser, for which I substituted maraschino. The icing combines straight whipped cream with some whipped cream that has been stiffened with corn starch. The result was both beautiful and tasty. Little things like this cake help to lift my day and the days of those around me with whom I share.

A Nutella Breakfast

I splurged on Nutella for my fussy French toast. Delicious! I am grateful.

Brunch at Mangelsen's in Omaha

Rye Bread Fussy French Toast

I bought some rye bread from Hy-Vee and decided to try it as French toast. I wasn't at all sure it would work---I was concerned that the rye taste would be too strong. But it was great. The rye came through nicely but wasn't overpowering. I am grateful for little surprises.
